Easy French Toast Casserole

My family has been going through bread like crazy the past few weeks, as always I keep the end pieces. I usually use the end pieces to make bread crumbs, but this morning I decided to do something different with them. I used six end pieces plus two more slices of bread to make the french toast casserole. My kiddos love my french toast, and they loved this recipe as well. I hope you enjoy it.

Ingredients

  • 8 slices of bread (I used regular loaf bread.)
  • 8 eggs
  • 1/2 cup milk
  • 2 tsp vanilla
  • 2 tbsp maple syrup
  • 1 tsp cinnamon 

Directions

  1. Preheat oven to 350 degrees F.
  2. Grease 9.5 x 7.5 pan or you could use an 8 x 8 pan ( I greased my pan with coconut oil.)
  3. Tear bread into pieces. Place bread pieces into the baking dish.
  4. In a bowl, whisk eggs, milk, vanilla, maple syrup, and cinnamon together.
  5. Pour mixture over bread pieces into the baking dish. Moving the bread around as necessary to make sure that all the bread pieces will be able to absorb the liquid. 
  6. Let it sit for at least 5-10 minutes. Depending on the type of bread you use, it may take longer for the mixture to be absorbed. 
  7. Bake in the oven until browned for approximately 25-30 minutes.
  8. If desired, top with maple syrup or powdered sugar. 

Notes: You could add in pecans, walnuts, etc.
